Baking Part Deux
Henry has been asking me to make fresh carrot juice since Tuesday. Finally, tonight, I juiced Henry some carrots. As stated, i juiced the carrots. I repeat, i didn't use the blender, i used the juicer :) Now, what remains of the sap, i used it to bake some carrot cake. And that's exactly how i started baking carrot cake- to salvage the remaining shredded carrots made from the juicer.

I'm baking! simply because someone has to put the kitchenaid into good use ;P
update: Jan 11, 2006-
After a round of carrot cake, my Dad-in-law came up to Henry and asked for another helping. He said "Ano yon, bili? Masarap!" (Did you buy it? It's yummy!) Henry told him we didn't buy it, i just baked it.. so DIL said "Meron pa?" (You still have more?) :)
Just like my lasagna, seafood paella, molo, oatmeal-raisin cookie, banana cake with chocolate chips... my carrot cake was a hit :)
TIP:
Carrot cakes taste better the finer you grate the carrots. In my case, the juicer made the finest shredded carrots.
Substitute pineapple juice if crushed pineapple isn't available, you can cut back on the oil also and you'll get the same yummy taste :)

carrots are good for the eyes too!
i have a big bag of walnuts here, which they said, is good when added to carrot cake. Sadly, I don't know how to bake nor have the equipment for it.
